Massimo Fongaro

TAFER Hotels & Resorts announced the appointment of Chef Massimo Fongaro's to Chef Patrón of NOI Italian Restaurant at the luxe, adults-only Hotel Mousai Puerto Vallarta. In this role, Fongaro supervises all aspects of operations spanning from food and beverage services to management, ultimately curating an exceptional dining experience for all guests. With an impressive career spanning over two decades, Chef Fongaro brings a wealth of gastronomic expertise to this award-winning resort.

While attending the Alberghiero P. Artusi Institute in Recoaro Terme, Italy, Fongaro quickly discovered his passion for gastronomy. He kickstarted his career as a specialty chef in Mexico with Intercontinental Hotel Groups in Los Cabos and Guadalajara. Throughout the years, he went from joining the GALILEO Restaurant in the United States, before returning to his home country of Italy, where he joined SPLENDIDO Hotels in Portofino and CIPRIANI in Venice. In his most recent position as Executive Chef at the Sagrantino and El Italiano in Guadalajara, Jalisco, Fongaro earned four consecutive Stars Diamond Awards and Canirac's Golden Fork for the best international Italian restaurant. With a fervor for blending traditional Italian cuisine with Mexican and Asian influences, Fongaro now leads as Chef Patrón at the contemporary and art-infused Italian eatery, NOI Restaurant.
