At the helm of Pavillon Ledoyen, the most Michelin-starred independent gastronomic establishment in the world, Yannick Alléno embodies a reformist vision of cuisine, continually pushing the boundaries of gastronomy.
In 2008, he founded the Yannick Alléno Group to unite a dedicated community around contemporary, identity-driven cuisine, expressed through his 17 establishments, which boast a total of 15 Michelin stars. Inspired by the legacy of Auguste Escoffier and driven by a spirit of openness, Yannick Alléno tirelessly explores culinary techniques, redefining and elevating sauces to the status of fine fragrances through methods such as extraction, fermentation, and cryoconcentration.
